to love well, you must eat well

My friend just passed this recipe on to me. The recipe is taken from a cookbook entitled Cook by a (local) professional home economist Deborah Anzinger. My friend is a dietition and also very fit so if she's feeding these to her family, I know they must be great! Enjoy!

SALMON PATTIES

Ingredients:
4 (213g) cans salmon, drained, bones removed
1/4 onion, chopped fine
3/4 cup bread crumbs
1/2 cup parmesan cheese, grated
3 eggs, beaten
dash hot sauce
1 tsp mustard
2 Tbsp fresh parsley, chopped fine
1/2 tsp salt
1/4 tsp pepper

3 tbsp vegetable for frying

Order of Events:
1. In medium-sized bowl, mix together all ingredients, except for the oil.
2. Form mixture into 6 patties.
3. Heat vegetable oil in a large frying pan over medium-high heat until a drop of water sizzles. Add patties and fry until golden brown, about 4 minutes; carefully flip and brown the opposite side until golden brown and heated through, about 3 minutes longer.
4. Serve.

Cooking time: 7-8 minutes
Equipment: large frying pan
Servings: 6
